No Halloween is complete without a delicious traditional dish to help celebrate. Why not try some of our recipes this Halloween.

 

Pumpkin Pie

Ingredients


1 unbaked 9-inch (4-cup volume) deep-dish pie shell
3/4 cup (6oz - 170g) granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon fresh ground nutmeg
1/4 teaspoon ground cloves
2 large eggs
1 1/2 cups (12fl/oz - 350ml) Nestle® Carnation® Evaporated Milk
1 3/4 cups (15oz - 425g) Libby's® 100% Pure Pumpkin or Fresh Pumpkin Pulp
 
To Prepare Fresh Pumpkin Pulp:

Half pumpkin and remove seeds and centre fibre.
Place face down on baking tray and cover with foil.
Bake for 1.5 - 2hrs at 375 degrees F (Gas Mark 5)
Allow to cool, spoon out pulp and liquidize.

Method

Preheat oven to 425 degrees F. (Gas Mark 7)
Combine sugar, salt, cinnamon, ginger, nutmeg and cloves in small bowl. Beat eggs lightly in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie shell.
Bake for 15 minutes. Reduce temperature to 350 degrees F (Gas Mark 4); bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately with whipped cream sprinkled with nutmeg, or refrigerate to store. (Do not freeze as this will cause the crust to separate from the filling.)
For 2 shallow pies, substitute two 9-inch (2-cup volume) pie shells. Bake in preheated 425 degrees F (Gas Mark 7) oven for 15 minutes. Reduce temperature to 350 degrees F (Gas Mark 4); bake for 20 to 30 minutes or until pies test done.
 

Toffee Apples

Ingredients


8 small apples, washed and stalks removed
8 fl. oz. (225ml.) water
1 lb. (450g) sugar
 
Method


1. Put the sugar and water into a microwave bowl and cook on Full power for 5 minutes
2. Stir until sugar has dissolved then continue cooking on Full power until golden, about 17-20 minutes
3. Meanwhile insert a 5-6 inch length of dowelling into each apple
4. Remove toffee from microwave and stand for 2 minutes
5. Dip the apples in the toffee mixture, using a spoon to cover the whole of the apples
6. Hold the apples over the bowl to drain then stand on greaseproof paper to harden
